Here is a great recipe I found here on Suite101 that really is a nice way to enjoy heirloom tomatoes with their (alleged) superior flavor. :-)

I know my mother-in-law makes homemade salsa: http://low-fat-cooking.suite101.com/arti... and freezes it by the bag in the large gallon size freezer bags.
She also cans her tomatoes for use in stews, soups and sauces throughout the winter. Sometimes she just peels them and cans them. Other times she premakes the sphaghetti sauce and freezes THAT - which comes in handy for meatloaf, sphaghetti, lasagnia, pizza, etc. through all the rest of the year.

You can use the same recipes for yellow tomatoes as you would for red tomatoes. Here are some tips on making sure the ingredients are acidic enough to be canned safely. This web site also includes some recipes for both canned and fresh salsa. There is even a how to video!

Here are a bunch of tomato recipes published by Texas A&M -- several for tomato relishes and chile sauce, and a variety of other uses.
